I've mentioned a few times that I like to play in the kitchen. I really enjoy trying new recipes, and coming up with something..different.

I'm not sure if I've mentioned that I'm pre-diabetic. Basically, I don't metabolize sugars as well as other people do. I have a family history of diabetes, so I take it seriously. It's completely under control by diet and exercise, but that's at a cost.

Luckily, I lost my sweet tooth long before I was diagnosed. I don't crave desserts most of the time.
But I used to eat lots of pasta. Now I barely eat any.

I've tried eggplant lasagna, but never really liked it.

Friday, I finally tried a recipe I saw online - a no-noodle lasagna. I used deli sliced chicken breast instead! The texture is almost perfect..and it has very little taste.

The only problem I found was that the starch in the noodles acts as a thickening agent. Not surprisingly, there is no starch in chicken breasts. My first result was rather runny. Next time, I'll either add a little corn starch, or a little gelatin.

Anyone else have any favorite spins on low or no carb foods?

Sometimes, I like to play in the kitchen. Usually I look for unique, impressive things to make..but on Thanksgiving, I tend to go traditional.
